Bacon is a favorite food of many Americans. When Americans speak of bacon they are speaking of pork belly, that has been cured in a brine (salt/sugar with seasonings) and then, smoked. It is distinctly different from Canadian Bacon. Also different from European varieties of bacon.
Apparently, the goodness of the fatty, salty, smoky American bacon has been discovered by people in other countries too. This revelation has given me cause for some level of concern. If the secret of bacon’s goodness is discovered widely throughout the world, I fear Americans may experience BACON SHORTAGES! Bacon shortages could turn to bacon rationing! The nation could be cast into a state of anarchy and black markets. Prices could sky-rocket! However, in spite of my deep rooted fear of bacon shortages, I will share some information about bacon with you, my faithful readers. I only ask that you use bacon responsibly.

The following list are some of my favorite ways to incorporate bacon into the menu.
BLT = Bacon, Lettuce and Tomato — maybe add some alfalfa sprouts too!
Peanut butter and banana sandwich with bacon.
Grilled Cheese and Bacon sandwich.
The Bacon Cheese Burger is a classic.
Bacon and eggs is a standard breakfast combination.
A steady diet of the above five menu items will likely result in cardiac arrest by age 40….but what a delicious way to go! ha!
Bacon mixed into scrambled eggs. I like my bacon cooked crisp. Some folks prefer lightly brown.
Crispy Bacon crumbles on salad, in soups, or on top of a baked potato adds a nutty-crunchy texture.
Spinach sauteed with shallots and bacon is far more exciting to eat than steamed spinach. You can also use other greens like, collards, kale and so on. Mix in a little shredded radicchio lettuce for nice color.
Navy Bean and Bacon soup is nice on a cold winter’s day.
Sauteed Garbanzos with Bacon and Green Onions makes a nice quick meal.
Scallops or shrimp wrapped with bacon and grilled is a big treat for guest.
Angel Hair Pasta with Bacon and shallots is terrific.
