Eggplant Parmesan is another dish I like to prepare at the end of summer. It is a filling meal for vegetarians when accompanied by pasta.
This dish takes a bit of preparation time, but when done properly, it is well worth the trouble.
This year was the first in a long time for me to grow eggplant. Eggplant, also called aubergine in many parts of the world, require warm soil temperatures and take more than 90 days to bear fruit, making them difficult to grow in the cooler climates with short growing seasons. In spite of my neglect of the garden this year I managed to harvest more than a dozen decent sized squash. I picked the last 4 today.
